Finca Atzumpa is now owned by the fifth generation of coffee producers in the Ariz-Herrera family, making it one of the first farms in the Concepción de Ataco region to grow specialty coffee since 1875.
Some of Atzumpa's coffee is processed at Germania, a small mill on the farm that has de-pulping, washing and drying facilities. At Atzumpa, the freshly harvested cherries are "seeded" without water to preserve the mucilage (which gives the bean its sweetness). They are then dried on raised beds for up to 14 days to achieve optimal conditions. After drying, the coffee is stored in El Carmens' warehouse and prepared for transport.
Some coffees are also dried on El Carmens' clay terrace. On this hot surface, the coffee dries faster, and the naturals take about 20 days to dry before being taken to the warehouse for their resting period.
First place finishes in the El Salvador Cup of Excellence in 2018 and 2019 speak for themselves.
