Like many coffee operations, there is a love story behind these beans. This farm was sold to the current owner Heiner and his wife Johanna twenty-five years ago. They have moved through a sea of varieties, ranging from Caturra to Castillo to today's Papayo, Pink Bourbon, and SL 28. El Rubi was a wedding present from the owner Heiner Lazo: he decided that the love for his wife was so great that even rubies did not suffice in symbolising his love. And so he gave his future wife thousands of rubies, all of which helped the couple and their three daughters flourish. This coffee, based on the Papayo variety, is rarely found outside the Huila region, and is named after the shape and smell of the cherries, which look like small papayas. The trees are strong, productive, and resistant to Roya disease.
