Frank Torres has been experimenting with anaerobic fermentation for several years on his La Indonesia farm in southern Colombia. This coffee was depulped, fermented in sealed bags, and then shade dried, resulting in a bright and juicy cup profile with a range of interesting tropical fruit notes. In addition to this innovative processing, Frank also keeps a keen eye on sustainability. His farm also supports the Native Seeds project, which has further developed the training of other coffee farmers in the region.
