Edilberto Torres Sanchez is a second generation Peruvian coffee producer located in San Antonio Huabal. The latter is a district within the Jaén province of Cajamarca and one of the main supply areas for high quality coffee in Peru. The potential of this area is yet to be discovered. The altitudes of the area range from 1200 to 2100 mslm, but most of the specialized producers are located at more than 1500 m above sea level.
Since Huabal straddles two mountains and in the valley between them, climatic conditions and soil composition in the area can vary considerably. Some areas have humid and moist conditions and red earths similar to those found in Africa, while others are dry and warm. All of this contributes to different and delicious cup profiles and increases the complexity of the coffees.
Edilberto grows the Catuai and Castillo varieties on his plantation, which is located at an elevation of 1600 meters above sea level. Edilberto started working on the Naturals last year after some successful tests. This micro-batch is therefore one of the first with a natural preparation.
