About the coffee

This coffee comes from producers living on Giko Hill, a small growing area that delivers cherries to Muzo Washing Station in northern Rwanda. The group was first separated in 2021 as part of an initiative to trace coffees back to specific hills and communities. This level of traceability is still uncommon in Rwanda, where coffees are often blended at the station level.

Farmers on Giko Hill cultivate very small plots. On average, each producer manages around 388 coffee trees, with some farmers tending as few as 60. These small garden farms contribute limited volumes, yet they represent an important part of Rwanda’s coffee landscape. By isolating lots from this hill, producers gain recognition for their work while building closer relationships with buyers.

At Muzo Washing Station, cherries are first sorted by hand under shade to remove underripe or damaged fruit. The cherries are then floated in water to separate dense cherries from lighter ones. Selected cherries undergo a washed process beginning with around six hours of dry fermentation before pulping. After depulping, the parchment ferments in water for approximately eleven hours before being washed and graded by density.

The coffee is then transferred to raised drying tables where it dries slowly over roughly 27 days. During this time, workers regularly turn the parchment and carefully monitor temperature and moisture levels throughout the day. This controlled drying helps the beans reach a stable moisture level of about 10.8 percent while preserving clarity and structure in the final cup.

Producers delivering cherries to Muzo receive prices above the national farmgate average. Additional seasonal payments help support farmers beyond the harvest period, strengthening long term partnerships and encouraging continued investment in quality.
