About the coffee
About the coffee
Doña Luz Dary has spent her entire life in La Llanada de Naranjos and has been connected to coffee cultivation since childhood. Raised in a farming family, she learned agricultural work alongside her father from an early age. Today she manages her own farm in San Agustín together with her husband, Don Helemile Muñoz. What began with inherited land gradually became an independent farm through decades of work — including the memorable moment when they sold all their chickens and even a motorcycle to purchase a long-desired plot.
Her day starts before dawn: preparing breakfast for family and workers, then joining harvest, drying, and processing — personally overseeing every step. For Doña Luz Dary, careful coffee production is an expression of care and dedication. Together with her husband and their son, she continues to strengthen quality and carry forward the family’s coffee tradition.
Coffee cherries are harvested every three weeks and undergo an initial 30-hour fermentation in traditional mayolica tanks. They are then depulped and left to dry-ferment in the same tanks for another 30 hours. After washing, the parchment rests for one hour before being spread on raised beds, where it dries slowly for 18 to 20 days.
Joining the MonKaaba project connected her work to quality-focused markets and brought fair recognition to many years of dedication.
