About the coffee

Diana Quinayas runs the farm Buena Vista, located in Los Robles, San Agustín. The farm sits at 1,950 MASL on just one hectare. This is a separation of Gesha, harvested in January 2025. We are so happy to share this coffee. The cup is elegant and impressively clean, with notes of bergamot, orange sherbet, and mango. From hot to cold, the cup develops and continues to open up, leaving you with a crisp finish that has you wanting more.

Diana is the sister of Yivier, whose Caturra we also purchased this season. At a young age, their father, Orlando, entrusted them with a small coffee plot as a lesson in responsibility and autonomy. This project taught Diana the importance of proper crop management, plant care, and future planning. Diana met her partner, Jhonathan, who was working on Orlando's farm, and when Diana turned 18, her father entrusted her with a new plot of her own. They began with 600 trees, and in time, took over a few Gesha plants from Yivier’s farm that weren't doing well. This is the first separation of those trees, and it may be the best Gesha we have tried from San Agustín!

Cherries are picked at peak ripeness every three weeks. The cherries are then depulped and left to dry ferment for 40 hours im majolica tanks. The seeds are then washed and moved to drying rooms where the seeds dry for 15-20 days.

About the roastery

ilse was founded in 2019 with a goal of showcasing the world's best coffees and a desire to open people's eyes to what coffee can be. High quality, high scoring coffee is what originally brought us into specialty coffee, but the people we have met along the way are what keep us here and more importantly, inspire and motivate us to grow.
