About the coffee
This coffee comes from the community surrounding the Aricha Wubanchi washing station in Yirgacheffe, located in the Gedeo district in southern Ethiopia.
Around 1,700 smallholder farmers work together here, cultivating their coffee cherries on small plots of land around their homes that are intercropped with fruit trees, shade plants, and rich biodiversity.
The Yirgacheffe region is known worldwide for its remarkable diversity of flavors. This quality is no coincidence: it stems from generations of local knowledge about soil, climate, and processing. The high altitude, fertile soils, incredible variety of coffee cultivars, and consistent rainfall create a unique terroir that shapes the character of this coffee.
Processing:
After harvest, farmers bring their ripe cherries to the Aricha Wubanchi washing station, where they are carefully sorted and depulped. The beans are then fermented, depending on the weather, for 36 to 48 hours, before being washed and sorted by density.
Drying takes place on raised African beds, which are covered during the hottest hours of the day to protect the beans from direct sunlight, and again at night to shield them from rain and moisture. This gentle process lasts 10 to 12 days and is closely monitored to ensure even drying.
Once dried, the beans are transported to Addis Ababa, where they are hulled, meticulously hand-sorted, and packed in GrainPro bags to preserve freshness and quality.
