About the coffee

In the highlands of Acevedo, Huila, Luis Aníbal Calderón tends his land at Villa Betulia with deep care and patience, guided by years of shared learning and connection to the rhythms of his environment. His approach to coffee honors both tradition and experimentation — valuing biodiversity, soil health, and the wisdom exchanged among neighboring farmers.

At a time when many producers were pushed toward higher yields, Luis chose to focus on quality, variety, and ecological balance. Through this vision, his farm became a place of collaboration, where seeds, ideas, and processing knowledge are shared freely within the community.

One of the coffees grown here is Caturrón, a rare, locally rediscovered variety native to Acevedo. For this lot, only ripe cherries were handpicked and depulped with the mucilage left intact. They then underwent a 72-hour aerobic co-fermentation with natural cardamom, allowing the spice to merge delicately with the coffee’s natural sweetness. The beans were dried slowly for 20 days on raised beds, preserving the balance of fruit and floral aromatics.

The result is an expressive, layered coffee — a reflection of Luis’s devotion, the vitality of Villa Betulia, and the collective creativity of Huila’s coffee-growing communities.
